New Orleans - the most delicious shrimp

Spanish, African, and Caribbean cooking, a rice-based dish piced up with sausage, ham, and seafood. So join the shrimp recipe.

Shark Fingers

  • 2 cups seasoned flour
  • 3 lbs. shark fillets
  • 2 cups fresh breadcrumbs
  • 3 eggs
  • Fat for deep frying

Cut shark into "fingers" 1/2 inch thick and 4 inches long. Dry thoroughly. Beat eggs slightly and dilute with 2 tsp. water. Roll fingers individually in flour. Dip in eggs. Roll in bread-crumbs. Dry on rack for 1/2 hour.
Fry in deep fat for 20 minutes or until golden. Drain and serve with tartar sauce.

Shark Fin Soup

  • 6 oz. packaged, dried shark fins
  • 1 lb. cooked ham
  • 3 lbs. chicken
  • 2 tbs. cornstarch
  • 2 tbs. soy sauce
  • 1/2 cup minced scallions
  • 1/4 tsp. seasoned salt

Shark soup 5 servings

Rinse shark fin. Soak 4 hours in warm water. Pour off water. Rinse and drain. Place shark fin in heavy pot with 6 cups of water. Simmer 1 hour. Pour off water. Simmer another hour in 5 cups of fresh water.

In another pot immerse chicken in water and simmer for 40 minutes. Remove chicken and dice meat. Add shark fin to chicken stock and simmer for 1 hour. Add shredded ham, diced chicken,and scallions.

Mix cornstarch and soy sauce with a bit of water until smooth. Add 1/4 cup of stock. Mix. Return sauce mixture to rest of stock with shark fin and bring to boil.

Add seasoned salt. Simmer for 2 minutes and serve.

Cut shark fillets into pieces suitable for serving. Score pieces every 1/2 inch and insert anchovy fillets. Place shark in buttered pie dish.
Season with salt and pepper. Heat butter in skillet. Add finely chopped onion and diced bacon. Fry for 5 minutes.

Add paprika, tomato paste, wine, cream and bring to boil. Pour mixture over shark. Then cover pie dish and bake in moderate oven for 20 minutes.
